Recipes from the Caravan

We live well on holidays! Going away with a big group of family and friends lends itself to trying new recipes or perfecting those old favourites. On our annual beach holiday we are lucky enough to catch a variety of seafood and every little thing we keep is put to good use.  Between a few camps we pitch in and help each other to create some pretty special dishes in my opinion. Here are a few we love. You’ll notice there are no specific quantities mentioned and that’s because it’s pretty much a guess or done by feel and taste when on holidays.

What’s in Your Caravan or Camping Pantry?

We are lucky in our caravan to have a small pull out panty in the kitchen cabinets and in it we always keep a few staples items that are versatile ingredients and can be used for many meals. All you have to do is add a few fresh ingredients and you’re set. There is also plenty of cupboard space in the kitchen area to add in a few extra handy to have ingredients for cooking on holidays. Whenever something is used it goes onto a shopping list straight away to replace so we are always set to go at a moment’s notice.

More Holiday Recipes

As it draws closer to our annual end of year holiday which involves a long, crowded, noisy getaway with family and friends to a familiar beachside caravan park, I start to revisit and update my holiday cookbook. In the caravan I always keep a soft folder full of plastic sleeves that I insert quick and easy typed up recipes for use on holidays.

Holiday recipes

It’s time to open up the caravan cookbook again and add a few more ideas to the choices of quick food to prepare on holidays, from a caravan.

Summer holidays means sourcing new salad recipes, ones that can be a meal in themselves and any other light, quick recipes that don’t take a lot of effort or need too many ingredients. I put together a book of favourites with photos of the places we’ve been to, but for everyday use in the van I have a soft folder of full of plastic sleeves with heaps of recipes in it.  The pages get moved in and out depending on popularity and success and I’m always adding to it.

Quick and Easy Chicken Enchiladas

img_0508I’m always looking for tasty and easy recipes to use when we are on holidays.  They have to pass the test of being not to fussy to make, easy to shop for ingredients wherever we might be an quick and tasty to make and eat.  Healthy comes into it as well, and if it can all be put together in one bowl / pan then its definitely in the book.

Another popular recipe that passes the test for us is my version of chicken enchiladas.  They are made with basic ingredients, take no time to cook and are very filling and tasty. The filling can be cooked all in one pan then the enchiladas are assembled, put into a baking dish / tray and into the oven or covered BBQ. Easy as! This recipe makes around 8 enchiladas which is perfect for 4 people.  I use wholemeal wraps instead of tortillas, because they are thinner and easy to find in any supermarket. They taste just as good of course with beef mince instead of chicken. The recipe follows:

Camping Food – More Than Just Sausages!

zucchini-pattiesJust because you’re camping doesn’t mean you have to go without good, healthy food. But don’t worry it doesn’t have to mean spending a long time in a kitchen or away from the action outdoors either.  I made my own caravan cookbook full of quick recipes that don’t have a lot of ingredients that can go to waste and they’re tried and true.
