New Recipe in print – Seasoned Fried Garfish

I’ve written another easy and tasty recipe for the current June/July edition of Fishing SA magazine. Even if you don’t catch the fish yourself, you can always pick some up from wherever you buy your fresh fish and give it a try.

These seasoned fried garfish fillets with grilled zucchini and feta, make a tasty entrée or happy hour snack when you’re caravanning, and as for all the recipes I try, they are quick to prepare and cook.

Basically the recipe is to coat the fillets in flour seasoned with oregano, salt and pepper, then shallow fry a few fillets at a time in hot oil. Meanwhile, cut zucchini into slices, drizzle with olive oil and grill on a barbecue until grill marks appear and they are slightly softened.

To serve, whack the garfish fillets on a platter topped with grilled zucchini slices, crumbled feta and parsley flakes sprinkled over the top. Add a good squeeze of lemon juice and serve with lemon wedges. Hand everyone a fork and dig in!
